Fantastic Friday!!!

I could barely peel myself out of bed this morning, and it took everything in me to make it through my workout. It’s been a very long week and I’m exhausted. However, In the last 2 hours I have received VERY exciting news from a friend and good things are happening at work, so I’m WIRED (maybe the Starbucks guy gave me regular espresso instead of decaf). It’s a GREAT day!!!

Thursday was a good day. Had a great workout, yummy eats, and a nice evening of meeting other Texas Young Professionals (TYP). This was my second event with TYP and I find it really interesting. Some people go around socializing and networking, while others stick together in their little group and look at you funny when you approach. In these situations I feel super uncomfortable. My feeling is if you are there you should be open to talking to people. If you don’t want to new people then please go somewhere else. Just my two cents.

Speed & Agility got the best of me yesterday. It’s a tough workout, and even harder when you’re slightly limited for some of the moves. By the end of the workout I wasn’t able to jump because of the pain going down my leg. I pushed as much as I could within my limits. I’m not trying to cause more damage.

Lately my favorite workout shirts are those that I get from 46NYC. They are a for-profit company that raises awareness about different issues, and when you buy a t-shirt part of the money goes to a specific cause. This year they are doing a new t-shirt a month. Last month was Autism, this month is Help-Portrait. Definitely check them out and check out this months organizing

I’ll be honest, this week I was going to start a new meal schedule and things got so crazy that I have been winging it all week. Yesterday I enjoyed egg whites with spinach, turkey bacon and gluten free toast for breakfast; shakeology for a morning snack; a salad with a gluten free southwest veggie burger for lunch; a larabar (key lime pie = AMAZINGGGGG) and a skinny latte for an afternoon snack; and dinner was greek yogurt with peaches, almonds and maple syrup. Next week I’ll be starting a new routine with more protein in hopes of getting toned and showing more definition. I’ll keep you posting on how it goes.

What I ate Thursday

Finally, I hope y’all are having a fabulous Friday! It’s a three day weekend and I hope you soak every minute of it up.

Question: What are your plans for this three day weekend?

Photo overload!

I must warn you in advance, I have a lot of photos for this post. They’re mainly from my workouts, because I found this cool new way to layout the photos in a film strip. It’s fun!

I’ve said it before and I will say it again, Insanity Asylum 1 Strength is my favorite workout of this program. I brought my own weights because I love them and because the ones in the gym are not friendly. Doesn’t this look like fun?

Strength 3

A few chest presses with my awesome weights

Strength 2

Push-ups with weight… get ‘er done

I had a fun workout, and a little fun after 🙂 I was SO happy it was Friday.

Good workout

Friday was a good day at the office. After a doctor’s appointment I headed into to get a number of things done. I called it quits at 5:30 p.m. because I needed to go home and grab a bite to eat before heading out for the night with a MeetUp group. Another event, another fun night. I met some really cool people at this event, and ran in to some familiar faces. I was a little intimidated going to the event because I went in and didn’t know anyone. It all turned out well. I was having so much fun meeting people and dancing, yep dancing, that I was out late.

Saturday was supposed to include a Retro 5k Run, BUT I set my alarm wrong. Instead I slept in (until 8 a.m.), go in a little stretch, and then planted myself by the pool. Just what the doctor order. Seriously, I needed this relaxing day.

Pool (Saturday) 2

The only thing I remember eating on Saturday was this delicious snack – rice cakes, almond butter and a banana. SO delicious, gluten free, and easy to make.

Saturday Snack

Saturday evening was relaxing. I organized my apartment a little more and went to bed early. I was exhausted from being in the sun all day, and more than happy to have such a lazy day.

Sunday was a mixture of insanity, pool time, making new friends and watching some hockey. Got up and went to the apartment gym and got my workout on.

I’m part of a challenge group on Facebook (think weight watchers, virtually). This has been a great support system for me during my journey. It’s not to be a part of a group of strong women who are all working towards the same thing – a healthy lifestyle. We all have success, we all struggle, and we all respect and appreciate on another. This month we were challenged to do wall and v sits (I think I mentioned this before). We started with 10 seconds on the first day and are building our way up to 5 minutes. Sunday was 3:10. Wall sit is no problem; the v sit is still getting me.

Sunday Workout 1

Today’s workout was Game Day and Overtime. The workout feels like the hour and 15 minutes it is. Just when you think it’s over, there’s more. I had some fun with the workout today, but still couldn’t wait for it to be over.

Sprints and “mountain climbing”

A little football and quick feet

Sunday Workout 3

Don’t remember what sport this is, bu there is a lot of balance involved.

Sunday Workout 4

Ice skating

At some point I also did a few tennis moves. Game day really covers it all. I was spent after, but new I had a full afternoon ahead. Got a few things done before plotting myself in front of the pool, again!

Pool (Sunday)

After enjoying the pool for a bit I went for a hike. I was invited by a friend who was going with a Meet Up group. I wasn’t sure I was ready for a hike after such an intense workout in the morning, but I went regardless. I’m glad I did. I had fun catching up with my friend, and enjoyed meeting some new people.

Sunday’s activities meant I needed to properly fuel my body. For breakfast I enjoyed Chocolate Vegan Shakeology with berries, almond milk, almond butter and protein powder. For lunch I enjoyed some tacos with chicken, spaghetti squash, hummus, peppers, and creamy garlic dressing. For dinner I had lettuce cups with shrimp, peanut sauce, rice noodles, spaghetti squash, peppers, and cucumbers. My belly is so full!

Sunday LunchSunday Dinner

I had such a great weekend! I love this city, the people I’m meting, my job, and the healthy life I’m living. Stay tuned for a busy week ahead!

Question: What did you do this weekend?

What is put a wing on it for the win?

Okay, okay. Maybe we didn’t win trivia last night, but we had an awesome time! The trivia questions were more up our ally. Granted we still didn’t know all of them, but they were more along the lines of what we were thinking the first trivia night was going to be like a few weeks ago. (Side note: “Put A Wing On It” was our team name)

I even indulged in some wings. They were good, not the best, and they ended up upsetting my stomach. I don’t think it was the actual wings themselves, or potential gluten contamination, I think my body isn’t used to this kind of food. I haven’t deprived myself from eating things like wings, it’s just been so long that my body wasn’t sure how to handle it. Would I eat them again, sure! Everything in moderation.

Here’s what I ate yesterday:

Yummy eats

  • Breakfast: gluten free toast, turkey bacon, 1 egg and 1 egg white.
  • Morning snack: Shakeology
  • Lunch: Spring rolls with shrimp, spaghetti squash, cucumber, carrots, peppers and edamame
  • Afternoon snack: celery with almond butter and raisins
  • Dinner: Wings

I managed to stay within my calories for the day, and am only sorry about the wings because it hurt my stomach. Otherwise, I’d eat them again!

It’s been so great meeting new people and developing relationships. I like that I have regular plans it makes me feel like I’m settling in, and that’s a really great feeling. Last night I learned from one of the girls that there are Moonlight Towers in Austin. Apparently, several decades ago these were brought to Austin to help illuminate the streets. Austin is the only city that still has these towers. Maybe one day I’ll go around Austin looking for them.

moon tower

Another reason why I didn’t feel too bad for indulging in the wings was because yesterdays workout was Speed and Agility. I’m really getting the workout. I’m starting to get my groove with the different footwork. I can also feel myself getting faster. I’m able to get through the different segments without having to stop… best feeling! Consistency is key. Being consistent with the workout, consistent with fueling my body, consistent with taking care of my body all make it possible to get stronger, faster and better. I’m so happy with my current progress and I’m only half way through the program. I can only imagine where I’ll be in two weeks.

I laughed when I walked into the gym yesterday because I saw the Derm infomercial. As I was changing the channel I then came across the Hip Hop Abs infomercial.

Y’all Beachbody wants to tend the trend of obesity. They are the real deal; their programs are the real deal. The don’t just talk about their workouts, they talk about creating a healthy lifestyle. It’s a process and results don’t just happen over night. It’s not just about your workouts, but also what you’re eating. Half the battle is getting started. Are you finding it hard to get started? I have a few tricks up my sleeve that I’ll share tomorrow!

Question: What are the best wings you’ve ever had?

Where’s Waldo?

It’s only Tuesday and it has been one of those weeks already where you don’t know your left hand from your right hand. Where’s Waldo?

One of my good friends is starting a new job today. For some reason though I thought today was Wednesday so when I was messaging her this morning to see how things went “yesterday”, she kindly informed me that today was Tuesday and her first day at the job. WOW! Maybe I need to go back to bed. Goodness 🙂

I must say I had a fabulous week! Friday night I went out to dinner with two girls that I met from MeetUp. We went to a place called Tacos and Tequila. I can’t say I was super impress with either the food or the margaritas. No worries though because I had a lovely time with the ladies and getting to know them.

tacos and tequila

Saturday was by far my favorite day of the weekend. I drove to San Antonio to get fitted for a bridesmaids dress for my sister’s wedding and then I had lunch with two friends (a husband and a wife) that I hadn’t seen in two years. They are originally from Texas, but moved to Virginia for a few years for a job, and then moved back to Texas for another job. I remember being so sad when they left, but kept insisting that I would see them again because i was going to be in Texas one day (and I didn’t just mean to visit).

It was AMAZING seeing them (I was so excited I forgot to take pictures). Seriously, they are two of the nicest people I have ever met. It was so good to catch up and pick up from where we left off. It didn’t hurt either that it was absolutely beautiful outside, which is where we sat and enjoyed a meal.

When I got back I went miniature golfing with a MeetUp group. I had a lot of fun and met some really cool people; I also got a whole in one and beat the three guys in my group. I’ll take it! I even went to dinner with a couple of the girls after at a place called Shady Grove. The food was pretty good and they had a decent gluten free menu (some of the wording wasn’t very clear, but overall good choices).

PP Mini Golf

Sunday was packed with a good Insanity workout in the morning, followed by a 2.5 hour walk around Town Lake (we walked the whole thing!) with a friend and meal prepping for the week.

Insanity Asylum has been great. I am really liking the program and the challenge each day brings. Back to core and Strength are my two favorite days. Here are pictures from those workouts. Today was day 14, so I’m almost halfway there. I definitely feel more energy in the mornings when I wake up, and throughout the day. Since I get up so early, I’m ready for bed at 8 p.m.! Haha I’m getting old. 🙂

Hope everyone is having a great week!

Question: When’s the last time you went mini golfing?

Moving and Grooving

I have to be honest, I have had so much going on this week at work that by the time I leave I just go home and crash. I haven’t gone to any MeetUp events this week, but I figure that I am allowed to have one “quiet” week. However, next week has to be different. It is very important for me to get out and meet people.

I promised myself when I moved that I would put myself out there and make new friends. This is important whether you move to a new city, or if you have come to the conclusion that you need to make different friends. Chalene Johnson, the author of PUSH and fitness enthusiast, frequently talks about the negative people in your life and how you should not make time for them; that it is important to “tighten your circle” and surround yourself with positive people who lift you up, not bring you down. Life isn’t about how many friends you have, it’s about the quality of friends. Asses your social scene this weekend and consider making new friends. It’s not always easy to cut ties with people you have known for several years, but it is better than letting them bring you down. You deserve to be happy (remember that, ALWAYS).

Moving on 🙂

Yesterday was another long day in the office. I’m moving and grooving and getting things done. So many wonderful things happening, and I CANNOT wait to share with everyone!

I started my morning with a fabulous workout. My back is still not 100% (go to the doctor’s next week), but I am not making excuses; still getting my sweat on. It’s important to note that while you can sometimes work through an injury, make sure you modify so that you do not further injure yourself.  If you aren’t sure how to modify your workout ask a trainer or your doctor.

I’m love Insanity; one of my favorite programs. Insanity Asylum 1 is just as amazing that I am strongly considering getting Insanity Certified so I can teach classes. Last year, I signed up to be a Beachbody Coach because I wanted the discount, but after going through my transformation it became SO MUCH MORE.

Plyo 1Plyo 2Plyo 3Plyo 4Plyo 5

My life did a 180 when I started working out last January 2, 2012. I committed to P90X for 90-days, I was drinking Shakeology, and eating right. I had amazing support from my coach, my challenge group (added accountability), family and friends. Throughout my journey I gain self-confidence in who I was as a person (daughter, sister, and friend) and learned my own self-worth. I MATTER (and so do you).

Because of this I started thinking about other ways that I could help people achieve their fitness goals and create healthy lifestyles for themselves. Being and active Beachbody coach is one of the, but getting certified as a personal trainer was another.

Unfortunately, because of cost I have to put that certification on hold. Thankfully though, Beachbody has created a program where you can get certified to be an Insanity Trainer. It’s more affordable and it’s a program that I believe in. Has anyone gone through the certification? What did you think? I’ll let you know what I decide to do. Stay tuned!

Before I end this fabulous Friday blog, I will leave you with what I ate Thursday. I made DELICIOUS gluten free “spring roll” with a dipping sauce (recipe to follow) that made the whole meal. I didn’t take a picture of my evening treat, but I go fro-yo AGAIN. I’m starting to think I need a fro-yo intervention. I wonder if I can go 21-days without eating fro-yo. Hmmm, I might take on this challenge. I’ll let you know Monday. 🙂

What I Ate Thursday

Lindsay’s “Spring Roll” Dipping Sauce:

  • 2 Tbsp. Gluten Free Reduced Sodium Soy Sauce (San-J)
  • 2 tsp. Fish Sauce (Thai Kitchen)
  • 2 tsp. Rice Vinegar Lite (Marukan)
  • 1-1 ½ tsp. Toasted Sesame Oil
  • 1 tsp. Sirarcha Hot Chili Sauce (amount vary depending on how hot you want the sauce)
  • 1 Tbsp. Minced Ginger

Hope everyone has a FABULOUS Friday!

Question: What are your plans this weekend?

Boy am I glad it is Friday! Happy dance!

Happy Dance

It has been another busy week in the office. Picture a juggling act at the circus; that’s been my life the last few weeks.

juggling act

This morning was off to a “great” start. I dropped an egg while attempting to make breakfast. I’m a genius! I thought I could catch it between the counter and my shirt, but wasn’t thinking about how it would break. I’m special 🙂

Fallen egg Fallen egg 2

I then was walking to my car and saw this –

Bird in the hallway

Yep, that’s right, that’s a bird just chilling in the hallway. It was alive and appeared to be unharmed so I let him or her be. I think I was more afraid of it than it was of me. It sat there staring at me as I quickly walked by. Haha!

Yesterday was another great day. I had a delicious salad with salmon and veggies for lunch (it was SO good) –

and for an afternoon snack I had Greek yogurt with maple syrup and almonds –

It was the perfect mixture of sweet and salty. My taste buds were satisfied.

After work I headed to another MeetUp event. This one was part of the Texas Young Professional group. It was cool meeting other people in the area and learning about what they do for a living and what they like to do for fun. I’m always amazed by the number of people I meet who aren’t originally from the area. It’s cool to hear their story about their journey to Texas, and what it is they like most about this city.

Seriously, if you’ve never tried a MeetUp group you really should. It’s intimidating to go to these events at first, but the more you go the more people you meet and the less awkward it becomes. I still find myself not really sure what to say after you ask the basic questions – what’s your name, what do you do, where are you from, what do you like to do, etc.

Looking forward to this weekend. I’m attending to two MeetUp events, getting in a couple workouts and hopefully relaxing a bit.

Question: What are your plans for the weekend?

Starting to feel like home

May those in Boston stay safe! This has been a crazy week in the news. Thoughts and good vibes to all those effected by this weeks events. Boston and West, may you continue to heal. Stay strong.

Work is BANANAS, like an Insanity workout BANANAS. We have so many wonderful things happening and coming down the pipeline that there is never a dull moment. If you like pizza, and you’re gluten free, you should try out par baked pizza crusts. Then, prepare yourself for our retail pizzas that will be hitting a store near you soon. Exciting!

Wednesday I went to Smash Burger with a co-worker for lunch. I decided to get their Cobb salad with chipotle dressing. It was SO delicious. The ingredients were fresh and the dressing had just the right amount of kick, and it was gluten free.

Lunch from SmashBurger

I treated myself to their sweet potato smash fries. I have a hard time saying no to sweet potato fries. 😉 Especially because it has been a while since I enjoyed a sweet potato (it’s part of my Monday night meatless Monday ritual), and I just love them. They are good for you in general, just a little less healthy fried. I was good though and didn’t eat all of them. I promise!

Sweet potato fries

Remember everything in moderation. Never deprived yourself of something you want because you’ll just end up binging later.

Day two of unpacking was a success. I still have a ways to go, but things are looking good and starting to feel like home. My bedroom is 90% set up; I just need to add some personal touches and it will be all set.

My bedroom 1   My bedroom 2

I did however find these items in one of the boxes that I unpacked, so I of course immediately displayed them. Kara, Joy and Mags, miss you ladies!

I also found this beauty (she made the fridge!). Baby Camden is just the sweetest and so beautiful. Miss her, her parents, and Buddy!

Camden makes the fridge

I unpacked these, but am thinking I won’t need them for a while. 🙂 Coats anyone?

I also unpacked my hanging clothes. It’s so nice to be able to wear something different than the weeks worth of clothes I had packed.

Closet 1

The living room is becoming emptier and emptier. Yay! I believe the rug that I purchased is coming soon (maybe even today) and the floor needs cleaned.

Night 2

Last night, I went to my first MeetUp event. I went to a few back in Maryland and met some really great people; shout out to my Fun Fit Professional friends! I was looking forward to this event in Austin however, I was a little nervous. It’s hard to go to these events and not know anyone, but it is important to remember that everyone else at the event was at one point new too. I met some really nice people; seriously some of the friendliest people. I can’t wait for the next happy hour event with this group.

If you are in a new town, or just looking for a new group of friends, I HIGHLY recommend you checking out There is a group for pretty much anything, and if there isn’t a group you can start your own. It’s a wonderful way to meet people in the area who have similar interests, and truly beats the alternative. Because there are so many different kinds of groups you can really challenge yourself and get out of your comfort zone by trying something new. It’s okay to be nervous and/or scared, but you’ll be stronger for it later.

Ready for the weekend!

Question: What is something that you have always wanted to do, but were too scared?
