Memorial Day Weekend

Hope everyone had a wonderful Memorial Day Weekend! I’m grateful to those who have served, are serving and will serve. I’m also grateful to the families who also make sacrifices every day so their loved ones can protect our freedoms. Special shout out to a friend who is currently deployed! Hoping for your safe return Robert!

Memorial Day

I had such a good weekend with new friends and new adventures in Austin. Friday night I went to Top Golf, which just opened a couple weeks ago. This place is SO cool! I’ve only golfed once in my life, and have never been to a driving range. A few of us decided to try golfing. Each ball has a chip in it and when you hit one of the targets you get points designated to that slot. I didn’t do well, but I didn’t do terrible either. Definitely a place I’d go to again!

After Top Golf, I went out to a couple bars downtown. My favorite bar of the night was the one that had skeeball. My friend and I played well over 10 games and I won every single time. 🙂 (Side note: I also played skeeball on Sunday and did NOT do as well. Haha)

Saturday brought more rain, which Austin is in a drought so we need the rain. However, I was hoping for some sunshine so I could sit by the pool. Since it was raining my friend and I decided to go to the Capitol instead of a hike. It’s a pretty cool place, and would make for some great pictures. I took this one of the dome that is 280+ feet from the floor; the star measures 8 feet from point to point. How crazy is that?!

Sunday since the sun decided to come out I went for a hike with another friend, and then went out to a few bars with a different friend. It had been a long day since I randomly woke up at 6:15 a.m. No reason either! Who does that when they can sleep in? Haha.

Monday brought some spring cleaning, organizing (although my closet could use some love), and an afternoon by the pool. All-in-all I would said I had a solid 3-day weekend. I even got some great workouts in:

Tomorrow is my last day of Insanity Asylum 1. Looking forward to taking the fit test on Thursday to see how much I’ve improved (here’s hoping my back cooperates!).

Fantastic Friday!!!

I could barely peel myself out of bed this morning, and it took everything in me to make it through my workout. It’s been a very long week and I’m exhausted. However, In the last 2 hours I have received VERY exciting news from a friend and good things are happening at work, so I’m WIRED (maybe the Starbucks guy gave me regular espresso instead of decaf). It’s a GREAT day!!!

Thursday was a good day. Had a great workout, yummy eats, and a nice evening of meeting other Texas Young Professionals (TYP). This was my second event with TYP and I find it really interesting. Some people go around socializing and networking, while others stick together in their little group and look at you funny when you approach. In these situations I feel super uncomfortable. My feeling is if you are there you should be open to talking to people. If you don’t want to new people then please go somewhere else. Just my two cents.

Speed & Agility got the best of me yesterday. It’s a tough workout, and even harder when you’re slightly limited for some of the moves. By the end of the workout I wasn’t able to jump because of the pain going down my leg. I pushed as much as I could within my limits. I’m not trying to cause more damage.

I’ll be honest, this week I was going to start a new meal schedule and things got so crazy that I have been winging it all week. Yesterday I enjoyed egg whites with spinach, turkey bacon and gluten free toast for breakfast; shakeology for a morning snack; a salad with a gluten free southwest veggie burger for lunch; a larabar (key lime pie = AMAZINGGGGG) and a skinny latte for an afternoon snack; and dinner was greek yogurt with peaches, almonds and maple syrup. Next week I’ll be starting a new routine with more protein in hopes of getting toned and showing more definition. I’ll keep you posting on how it goes.

Finally, I hope y’all are having a fabulous Friday! It’s a three day weekend and I hope you soak every minute of it up.

My New Couch

Tuesday was so crazy that time flew by. I didn’t realize I had missed lunch time until my stomach start making noises around 1:30 p.m., which also happened to be the same time the delivery people arrived at my apartment. They were supposed to call before they were coming, but instead they called when they got to my apartment. Good thing I live close to work. I was so excited, I couldn’t get home fast enough. LOOK!

Because I was so caught off guard I didn’t end up sitting on my couch until after I got home from work. Don’t worry, it’s awesome! YAY! Now I just need a chair, a coffee table, and a t.v. stand.

I think all my energy from the day came from my workout. I’m officially 21 days into Insanity Asylum 1 (75% complete) and I feel amazing. Tuesday’s workout was “back to core”. Something I have learned over the last several months is to engage your core. I know it sounds simple, but when you really try to do it, it’s not the same. Try it!

No matter how may times I do the last move in the last photo above, I still start shaking around the minute and thirty second mark (you go for a total of three minutes). It’s a good shake and I know I’m getting stronger and stronger.

Another highlight of the day was my yummy meals. I had Shakeology for breakfast, Greek yogurt with blueberries for a snack, a nice salad for lunch, Rice cakes with peanut butter and banana, and yummy shrimp tacos for dinner (these were amazing!).

What I ate Tuesday

Make these yummy gluten free tacos tonight:

Ingredients
¼ cup squash
¼ cup zucchini
¼ cup sweet potato
¼ cup black beans
3 oz. shrimp (about 8)
¼ cup lite coconut milk
2 gluten free corn tortillas

Directions

Cut yellow squash, zucchini and sweet potatoes into cubes. Put them into a small pan on medium heat. Let them cook for about 5 minutes. Add shrimp and cook for about 2 minutes. Then, add coconut milk and let simmer for about 5 minutes on low-medium heat. Add black beans and let cook for 2 minutes.

Take tortillas, wrap a damp paper towel around them and heat for about 20 seconds. Remove tortillas and added ingredients from pan. Serve and enjoy!

Makes me wanna jump, jump

Yesterday was one of those days where I needed an extra day to rest. My plan to relax all weekend didn’t exactly happen. However, it was a good weekend so I can’t really complain.

As tired as I was, I got up and worked out (Insanity Asylum 1 – Plyo). I definitely don’t regret it because it made my day that much better. However, I couldn’t move for the rest of the day (and I don’t mean in a good workout kind of way).

I’ve been having back problems since the end of February. I took two weeks off at one point to try and recover, and eased back into my workouts. Unfortunately, it didn’t help. Last Friday I gave in and went and saw a doctor. She gave me something to take for 6-days, and told me if that doesn’t help I need to get an MRI. UGH! I’m not a go to the doctor, take medicine kind of person unless I REALLY have to. Well, I guess I’m at my breaking point because I can’t not workout so I need to figure out this whole back thing.

My day just doesn’t feel right if I don’t get some type of workout in; even if that workout is stretching. So, over the last couple months I have been modifying certain moves (squats, twists, etc.) and being extra careful. My back feels good 90-95% of my workout, which is great. The times I feel the most pain is when I go to stand up after sitting, getting up in the morning (I literally rolled out of bed today), and when I sit. If this was just a pulled muscle wouldn’t it be better by now? I want it to only be a pulled muscle and for it to go away; it’s cramping my style 🙂

Anyways, yesterday’s workout was great. I wore my sparkle to help me get through my workout.

Plyometrics is jump training, whether it straight up in the air or you’re going side to side. It’s not an easy workout, but it’s not a bad workout either. I was super excited when I saw this shot yesterday; look how high I jumped!

I also enjoyed Shakeology for a morning snack, a salad for lunch, veggies with hummus for an afternoon snack and Verts (a local Austin-based chain) veggies bowl for dinner. All in all it was a great Monday! I’m ready for the rest of the week!

I’ve said it before and I will say it again, Insanity Asylum 1 Strength is my favorite workout of this program. I brought my own weights because I love them and because the ones in the gym are not friendly. Doesn’t this look like fun?

I had a fun workout, and a little fun after 🙂 I was SO happy it was Friday.

Friday was a good day at the office. After a doctor’s appointment I headed into to get a number of things done. I called it quits at 5:30 p.m. because I needed to go home and grab a bite to eat before heading out for the night with a MeetUp group. Another event, another fun night. I met some really cool people at this event, and ran in to some familiar faces. I was a little intimidated going to the event because I went in and didn’t know anyone. It all turned out well. I was having so much fun meeting people and dancing, yep dancing, that I was out late.

Saturday was supposed to include a Retro 5k Run, BUT I set my alarm wrong. Instead I slept in (until 8 a.m.), go in a little stretch, and then planted myself by the pool. Just what the doctor order. Seriously, I needed this relaxing day.

The only thing I remember eating on Saturday was this delicious snack – rice cakes, almond butter and a banana. SO delicious, gluten free, and easy to make.

Saturday evening was relaxing. I organized my apartment a little more and went to bed early. I was exhausted from being in the sun all day, and more than happy to have such a lazy day.

Sunday was a mixture of insanity, pool time, making new friends and watching some hockey. Got up and went to the apartment gym and got my workout on.

I’m part of a challenge group on Facebook (think weight watchers, virtually). This has been a great support system for me during my journey. It’s not to be a part of a group of strong women who are all working towards the same thing – a healthy lifestyle. We all have success, we all struggle, and we all respect and appreciate on another. This month we were challenged to do wall and v sits (I think I mentioned this before). We started with 10 seconds on the first day and are building our way up to 5 minutes. Sunday was 3:10. Wall sit is no problem; the v sit is still getting me.

Today’s workout was Game Day and Overtime. The workout feels like the hour and 15 minutes it is. Just when you think it’s over, there’s more. I had some fun with the workout today, but still couldn’t wait for it to be over.

At some point I also did a few tennis moves. Game day really covers it all. I was spent after, but new I had a full afternoon ahead. Got a few things done before plotting myself in front of the pool, again!

After enjoying the pool for a bit I went for a hike. I was invited by a friend who was going with a Meet Up group. I wasn’t sure I was ready for a hike after such an intense workout in the morning, but I went regardless. I’m glad I did. I had fun catching up with my friend, and enjoyed meeting some new people.

Sunday’s activities meant I needed to properly fuel my body. For breakfast I enjoyed Chocolate Vegan Shakeology with berries, almond milk, almond butter and protein powder. For lunch I enjoyed some tacos with chicken, spaghetti squash, hummus, peppers, and creamy garlic dressing. For dinner I had lettuce cups with shrimp, peanut sauce, rice noodles, spaghetti squash, peppers, and cucumbers. My belly is so full!

Sunday Night Special

Friday was SO crazy, that I forgot to post my blog! I decided to post tonight as a little extra surprise.

Thursday was a challenging day at the office. There is a lot going on, and I’m learning every day how to juggle and manage it. It’s not easy, and there is a lot of pressure to get things done, but I know I can do it. I know that I have the skills to get the job done well. I know that in due time everything will come together nicely, and things won’t be so crazy.

Thankfully, I was able to take my mind off my day, by enjoying an evening with friends. Something wonderful about being able to sit down and relax and talk about anything but work. I am so grateful to have made these connections in Austin and to be developing these relationships. I’m so happy.

Lunch was a salad with chicken and creamy garlic dressing. This has been my go to lunch these days. It is super easy to make and nice because you can add any protein you want. The dressing is from the Ultimate Reset, and it takes minutes to make. It’s nice to make a patch at the beginning of the week and use it throughout the week. Love a great salad!

I had a fabulous plyo workout on Thursday. This is a very difficult workout, but when I get through it I feel amazing. I push myself to be better, do better, and jump better every time I do this workout. I love seeing my progress – being able to get through the whole workout without stopping or jumping higher. IT’S AWESOME!

What is put a wing on it for the win?

Okay, okay. Maybe we didn’t win trivia last night, but we had an awesome time! The trivia questions were more up our ally. Granted we still didn’t know all of them, but they were more along the lines of what we were thinking the first trivia night was going to be like a few weeks ago. (Side note: “Put A Wing On It” was our team name)

I even indulged in some wings. They were good, not the best, and they ended up upsetting my stomach. I don’t think it was the actual wings themselves, or potential gluten contamination, I think my body isn’t used to this kind of food. I haven’t deprived myself from eating things like wings, it’s just been so long that my body wasn’t sure how to handle it. Would I eat them again, sure! Everything in moderation.

Here’s what I ate yesterday:

Yummy eats

  • Breakfast: gluten free toast, turkey bacon, 1 egg and 1 egg white.
  • Morning snack: Shakeology
  • Lunch: Spring rolls with shrimp, spaghetti squash, cucumber, carrots, peppers and edamame
  • Afternoon snack: celery with almond butter and raisins
  • Dinner: Wings

I managed to stay within my calories for the day, and am only sorry about the wings because it hurt my stomach. Otherwise, I’d eat them again!

It’s been so great meeting new people and developing relationships. I like that I have regular plans it makes me feel like I’m settling in, and that’s a really great feeling. Last night I learned from one of the girls that there are Moonlight Towers in Austin. Apparently, several decades ago these were brought to Austin to help illuminate the streets. Austin is the only city that still has these towers. Maybe one day I’ll go around Austin looking for them.

Another reason why I didn’t feel too bad for indulging in the wings was because yesterdays workout was Speed and Agility. I’m really getting the workout. I’m starting to get my groove with the different footwork. I can also feel myself getting faster. I’m able to get through the different segments without having to stop… best feeling! Consistency is key. Being consistent with the workout, consistent with fueling my body, consistent with taking care of my body all make it possible to get stronger, faster and better. I’m so happy with my current progress and I’m only half way through the program. I can only imagine where I’ll be in two weeks.
