Baby Shower for a friend (part 1)

Note: This is a two-part blog.

This past weekend I threw a baby shower for two friends of mine. The father-to-be is best friend’s with my boyfriend, and the mom-to-be has become a friend of mine. A few months ago they were preparing to go to a doctor’s appointment to learn the gender of their baby. At first they wanted to know and share the news with friends at a baby gender reveal party (this is definitely a new trend), but then they changed their minds and decided they wanted to find out together with all their friends. Did I mention that I offered to bake the cake that revealed the gender? Oh the pressure to keep a secret – from everyone!

Two days before I moved into my new place and got the little piece of paper telling me whether or not my friend’s were having a boy or a girl, I had a really crazy dream. Let me preface by saying, I’ve had deja vu moments, but I’ve never had dreams where I’ve talked to someone who has passed or dreamt something that ends up coming true. Well, Wednesday night I went to bed and had the following dream – I’m in the kitchen baking a cake for the baby reveal party. As I start to fill the middle of the cake with frosting there is a knock on my door. I open the door to find the parents-to-be. The mom-to-be says, “Why are you filling that with blue frosting?” To which I replied, “It’s blue because you’re having a boy.” The mom-to-be asked how it was possible I knew they were having a boy since they hadn’t given me the piece of paper. I looked at her and said, “I just know!” I woke up not thinking much of it.

That Friday while I was moving the parents-to-be came over with the piece of paper inside a sealed envelope. After they handed it to me and left, I stood there staring at the envelope. I was nervous to open it! I knew they wanted a girl, and was hoping they wouldn’t be disappointed if the paper said boy. Well, I opened the envelope and the piece of paper read, “Baby Boy!” Ugh! My heart sank. For a brief moment I felt bad for them because I knew they wanted a girl. Then I quickly turned my attitude around and thought, the most important thing is that they have a healthy baby.

Saturday morning I woke up and baked the cake along with 2 dozen cupcakes with blue frosting in the center. Chocolate cake per the mom’s request and funfeti cupcakes for everyone else:

Here we are a few months later and we just celebrated the parents-to-be this past weekend with a shower. I had a fun time picking out invitations and decorations, along with planning the menu. The theme of the nursery is jungle – so that was theme for the baby shower. More to come tomorrow! 🙂

Day 3 A Little Rocky

I will be the first to admit that I don’t always have perfect eating days. Sometimes I’ll have a weeks worth of good eating and then a day or two of not so good eating. It all depends on what is happening in my life, and how prepared I am (even if I’m fully prepared things come up). Having said all that, I do wake up every day with the intention to eat healthy. Yesterday was one of those days that started good, but had a bump or two in the road.

Tuesday night I prepared for my Wednesday morning workout. I set my alarm, put out E&E, and a NoGii bar (pre-work snack). Having everything laid out the night before helps me in the morning. It’s nice to roll out of the bed and have everything ready to go and set up.

Yesterday’s workout was ChaLEAN Extreme Burn Circuit 3. I LOVE this program and the resistance training. I always feel stronger after a workout, and know I put my best foot forward when I’m shaking after

After my workout I was ready for the day. I was focused and determined to tackle the challenges of the day. I knew proper fueling would do the trick. So, for breakfast I had 2 eggs with 1/4 cup steel oats and 1/8 cup of cheddar cheese

I was right on track and the day was coming along nicely. Then they brought pizza out from the back. Y’ALL I CAN’T RESIST PIZZA! It is a weakness of mine. For years I didn’t eat pizza because I couldn’t find a gluten free pizza that was tasty, and worth the calories. Fortunately I work for a company that produces an amazing gluten free pizza crust. Unlucky for me we have to test it out. 🙂 Okay, it’s not unlucky; I love it! There is no filter on this picture; how yummy!?!?


Finished off my day at the office and enjoyed an afternoon snack of a small grapefruit [not pictured], mixed fresh fruit and cottage cheese.

Afternoon Snack

Last night was trivia night. I knew since I splurged earlier in the day that I would be good and get a salad for dinner. I also figured a salad would be safer; the last time I ate at Pluckers (I had wings) my stomach was upset. Well unfortunately the chicken salad I had with grilled chicken, shredded parmesan cheese, corn, black beans and a balsamic apple cider vinaigrette on the side did NOT sit well.


I’m guessing I’ll have to eat before I go next time. It’s okay, I prefer the great company and trivia game.

The highlight of my day was a card that I got in the mail from my dear friend Emily. It brightened up my day. I’m so lucky to have her in my life. Can’t wait for her and the rest of the RI crew to come visit me in TX.

Four Day Weekend to Remember

After a whole lot of craziness these last four months, I enjoyed a nice four day weekend with great friends! There were lots of bbq’s, some pool time, pretty fireworks, a nice showing of Despicable Me 2, and a couple naps to keep me going. It was nice to unplug and not thing of anything work related.

Thursday – July 4th

I love the 4th of July because I LOVE fireworks!!!!!!! I was fortunate that one of my friends has the perfect view of them from his apartment.

About 8 of us gathered for a bbq at his place; we had so much fun. I enjoyed my burger on one of my companies gluten free buns. It was SO yummy. I have made some really great friends here and couldn’t have asked for a better night. I was a little disappointed by the less than 15 minute show of fireworks, but they were still pretty.


Friday – July 5

With another full day off before the weekend I found myself at a loss for what to do. Thankfully I was in company. Enjoyed a nice little walk in the am followed by Despicable Me 2 in 3D. The picture is dark, but we got to wear the cool glasses because the movie was in 3D.

After the movie I enjoyed a little pool time and then went to a comedy show later that night. It was a small little venue with 6-7 comedians all testing out their material. It was good. Some of it was really funny, some not so much.

Saturday, July 6

What was supposed to be a day on a boat, turned into a day of relaxing indoors to stay cool and then hanging by the pool. Saturday night I went out with some people, including one of my very good friends who is here for the year from Dublin. I absolutely adore this girl. She’s so sweet and we always have a great time together.

I’m not a shopper. In fact, if I can avoid it I will. I have to be in the mood to even consider it, and by the time I arrive at the shopping location I’m over it. But Sunday meant rallying and going with the boy to pick out some new clothes. Haha, highly entertaining. I ended the day with a small gathering/bbq and the screening of Ray Donovan episode 2. Anyone else watch this show? If not, START! Don’t pass go or collect $200, just watch it.

Oh, I enjoyed some yummy gummy bears (total weakness). One of the grocery stores has them by the pound in 15 flavors; I meannnnnn 🙂
