Moody Monday

Yesterday was rough! I don’t blame it on being Monday, although that didn’t help, rather I think it was just a tough day and it happened to fall on a Monday. I didn’t get much sleep the night before, so I was tired and not feeling well. Everything seemed to go wrong at the office, with a little glimmer of hope with continued good news from Friday’s good news.

I was good with my clean eating all day, until I got home last night and enjoyed some hummus that I had made over the weekend and chips. Oh, well! Today is a new day and I’m treating it as such making better decisions. For breakfast I ate eggs, steel oats and a little cheese. This is something the boy eat every day, and I have to say no only is it easy, but there is a ton of protein and leave me full all morning (good for days I can’t have a morning snack). For lunch I enjoyed a nice salad with shrimp:


What’s in the salad? Mixed spring greens with arugula, shredded carrots, cherry tomatoes, sprouts, purple cabbage, baby cucumbers, green peppers, shrimp tossed in a homemade balsamic dressing. It was so good!

For snacks I had Shakeology and yogurt (Fage with strawberries) and a Gala apple.

Dinner I made a Beachbody Ultimate Reset recipe: Garlic Veggies.


This is super easy to make (I made it Sunday) and put it over 1/2 a cup of quinoa. What veggies did I use? I cut up zucchini, asparagus, red bell pepper, broccoli, and carrots. I sautéed in a little olive oil and lots of garlic. Yummy!

The boy has been in Dallas since Sunday and is gone until Wednesday. He asked me if I would check in on his cat, Ace. Full disclosure (and he knows this) I’m not a cat person. I grew up with cats, but they stayed outside (except for winter) and chased away the rabbits. I prefer dogs and have always wanted one of my own. Life is so crazy that I know now is not the time, not to mention I want a big dog and I don’t think it’s fair to keep it in an apartment. Anyways, I went over after work to hang out with the cat so it could get out of the bedroom/bathroom. Ace knows that there is a drawer filled with of vitamins and one of them is fish oil. He likes to get into the draw and drag the vitamins all over the house. I was tired of getting up every 2 minutes to stop Ace, so I put a chair in front of the drawer and cabinet. He was pissed, and wouldn’t come near me for 30 minutes:

He finally got over it (for the most part) and hung out with me for a little and watched t.v.

One of my closest friend’s was going out for some drinks with her co-workers that were in town, so I joined them for 2 ciders before calling it a night

This weekend was busy in a lot of ways and very relaxing in other ways. Friday we got amazing news at work. I cannot wait to share it with everyone when I’m allowed. Later that night I went to a HH, an art thing, and then hide from the horrible thunderstorm we had later that evening. Friday night got a big thumbs down!

Saturday morning I made breakfast and got ready for what was promised to be an interesting afternoon. In a semi round about way I was invited to this things where a guy was testing out a “game” that he had developed. I put “game” in quotes because I am still trying to figure out where the competition side of what we were doing was. Think charades, with one movie clip that you have to film and edit in a certain time frame. Here are some pics from the day:

Saturday evening my friend had a birthday party for her husband. They live out in Dripping Springs, which is the county of Austin. It’s really not far from the city, it’s just once you hit the country roads it takes a minute to get there. The view was AMAZING! Seriously can you beat this sunset (no filter)?


My friend’s husband and dad set up horseshoe in the backyard earlier that day. I was ready to break it in for them, so I challenged the boy. Unfortunately, I lost, however I got my revenge when playing blongo ball:

Sunday was a busy day. I was going from 11 a.m. until 7 p.m. running errands and prepping food for the week.

To start the day off right I had egg whites with spinach and parmesan cheese and a side of avocado.

The night before I got stung by a mosquito under my eye. YES under my eye! I have no idea how it happened. I didn’t feel it when I got bit, but definitely did after it happened. It was painful. I always get bit, mosquito’s even find me when I’m wearing bug spray. Craziness! When I woke up Sunday morning my eye was a little swollen and hurt, so to help me with my errands I indulged in some of these goodies:

You would think after all the errands and food prep I would be tired. I thought so too, so I crawled into bed. I couldn’t fall asleep so I caught up on my correspondence (haha, make me think of Friends).


I like to think I keep the post office and sticker companies in business. I love sending cards to my friends just to say hi and let them know I’m thinking about them. After finally falling asleep an unknown number called my phone at 3:30 a.m. I normally turn off my ringer, but I forgot and it woke me up. After that I didn’t really sleep. Needless to say it’s MONDAY! Have a great day y’all!

Fun Facts Friday

Well Friday is finally here!!!

Happy Friday Everyone

At the beginning of the week I wasn’t sure that it was ever going to get here, now that it is here the work day can’t end soon enough. Seriously, I’ve lost all concentration. For this Friday I’m going to give you some fun (and random) facts. Ready?

  1. I’ve always had a great sense of direction. When my brother was born, I was 4, my grandma was tasked with taking me to preschool. I was the one who gave her directions on how to get there and then how to get home. I’m just saying if you ever get lost let me know! 😉
  2. I do not have a sweet tooth, but every now and then I crave dark chocolate like it’s going out of style.
  3. In the last two months I have only had fro-yo ONCE. For a girl who had it every day for 8 months this is a big deal.
  4. I prefer color .5 mm pens or thin color Sharpie markers to black and blue pens.
  5. My favorite number is 13, and was the number I used when I played sports.
  6. Growing up any time I had a major paper or test do for school I would rearrange my bedroom. My parents always knew something was going on when they walked in my room and my bed was on a different wall.
  7. I’m always looking for inspiration and new recipes. One blog that I turn to a lot is Skinnytaste. The recipes are delicious, usually easily convertible to be gluten free, and they’re healthy.

I have a fairly busy weekend ahead, but it should be good! Hope everyone their weekend. Do something fun!

Yummy, yummy in my tummy!

After writing yesterday’s blog I was craving tacos. The thing I love about tacos is that there are so many amazing different versions so you can never get bored. Between  veggies, beans, meats/fish, cheeses the options are endless. Before I headed to the grocery store, I made a list to stay on track. Here’s the list:

  1. tilapia fillets – 2
  2. romaine lettuce
  3. purple cabbage
  4. sour cream (I went with light)
  5. chipotle sauce
  6. sharp cheddar cheese
  7. hot salsa
  8. corn tortillas

Once I got home I started cooking! Here are the instructions:

  1. Clean and cut (about 1/4″ thin) romaine lettuce – 1 1/2 cups
  2. Cut purple cabbage – 1 cup
  3. In a small bowl mix 3 tbsp. of sour cream and chipotle sauce to taste (I would say I put in about 1 1/2 tsp.)
  4. Add the sour cream/chipotle sauce to the cabbage and mix it up. Set aside.
  5. Mix together taco seasoning (see yesterday’s post).
  6. Take taco seasoning and rub it on the tilapia fillets.
  7. Cook tilapia fillets 2-3 minutes per side. Remove from pan and let sit a minute.
  8. While the tilapia is cooking place 2 corn tortillas in the oven to warm up (about 3 minutes).
  9. To assemble take 1 corn tortilla, add romaine lettuce, cabbage with sauce, cheese, fish (I used about 3/4 of one fillet for the two tacos), salsa and a little more chipotle on top.

I meant to add avocado and squeeze lime on top, but this looked so yummy after assembling that I completely forgot! Best part for all you gluten free friends, this is gluten free and took me all of 20 minutes to make! Enjoy!

Tacos & Margaritas

I’m a BIG, HUGE, GIGANTIC fan of tacos and margaritas. Austin is obviously an ideal location to fill this “obsession”. There are tacos everywhere, which of course means margaritas are offered as well; they go hand-in-hand My girlfriend’s and I in Maryland frequented Uncle Julio’s. They have amazing margaritas (love the skinny guava rita) and food (they’re really great about my gluten free needs). They just opened up a location in Austin and I am SO looking forward to frequenting.

Sometimes though it is just as nice to be in the comfort of my own home making tacos and margaritas. When I went gluten free two and a half years ago I discovered that the taco seasoning I grew up on had the potential to not be gluten free. I was bummed because I knew tacos at home would never taste the same. For a while I would just throw a bunch of seasonings and hope for the best. The tacos always came out differently, and I was never fully satisfied.

About a year ago, my good friend Kelly share a simple taco seasoning recipe that she uses. It’s so good, simple to put together, and great to keep in a jar to always have it on hand. Check it out:

I love tacos (corn tortillas of course), taco salads, enchiladas, fajitas…all of it! Usually when I’m at home, I’ll be honest, I don’t typically have a margarita. On the rare occasion that I have had a margarita it’s because my friend Maggie was making them for us. I’ll have to get her recipe and share it with everyone; they’re delicious!

Being it’s Tuesday, I’m making tacos tonight for dinner! Debating between fish, chicken and beef. We’ll see what I end up walking out of the store with. 🙂

Short, but long weekend

Anyone else exhausted from the weekend? I don’t know what it was, seeing as I didn’t do a whole lot, but I am EXHAUSTED!

Friday night I went on a boat to support Big Hearts for Brave Hearts. As a kid who grew up going to camp, and loved every minute of it. I know just how special it is that this camp is available to kids who are grieving the loss of a loved one. I was happy to get on board and support a great cause. Good company and this sunset from Lady Bird Lake didn’t hurt either (no filter)!

Saturday was a full day of nothing! The last two weeks people have been out sick with some sort of summer bug. I think I might have caught it, as I was down for the count. Feeling better today, but I can’t say the same for Saturday.

Sunday, I rallied for paintball. A big group of us went out to celebrate a friend’s birthday! It was a lot of fun, but after three rounds I was done. Better the heat, still not feeling 100% and my back I had to sit out. I was so tired I could fallen asleep while we waited for everyone else to finish.

I couldn’t be more excited that it is Friday! Okay, I could be if I wasn’t working 🙂

Yesterday was awesome! Crazy work day, followed up by a fun Texas Young Professional Happy Hour. Was good all day about my clean eating, then I got to dinner and indulged a little. I had grilled chicken with spinach, garlic (a lot of it) and bacon (no bun because it wasn’t gluten free) with a side of fries (I shared them so I didn’t eat that many). Wasn’t mad at myself, just know that it was a treat for the week. I’m going to try to be good about food this weekend. I’ll report back on Monday on how it goes.

Excited for the weekend ahead. It isn’t going to be too crazy, hopefully even relaxing. Tonight I’m going on a boat; it benefits Big Hearts for Brave Hearts. It should be a good time – food, drinks and good company.

Saturday is going to be a mixture of relaxing and crazy. I’ve planned a run for the morning (got new kicks; need to test them out), errands and maybe a little pool action. Hoping for a nice quiet day.

Sunday I’m going paint balling. I have never been and am a little scared. I’ve heard it so much fun, but also really painful. My friend told me that when it’s warm outside the paint balls are softer, verses in the winter they’re hard as rocks. I will also report back on Monday how it goes.

What I Ate Wednesday

Happy Thursday y’all! Hope everyone had a wonderful Wednesday. We’re so close to the weekend; we can do this!

Wednesday was overall a pretty great day. I got up in the morning stretched and lifted some weights with these guys:


I love my free weights and still am so glad that I made the investment. Once I’m able to get back full force, I plan on doing ChaLEAN Extreme again. This is a great Beachbody program because there is cardio and strength training. This is a program that taught me to lift heavy, the importance of strength training, and how to eat well.

Needless to say the mini workout was a great way to start the day. I kept up with the day by clean eating. Here’s the breakdown of what I ate Wednesday:

Breakfast: 2 sunny side up eggs, 2 pieces of turkey bacon and 1 piece of gluten free toast. So simple, easy to make, and keeps be feeling full


Morning snack: I was still pretty full from lunch, but knew I needed to eat something. So I enjoyed a delicious grapefruit, which I haven’t had one in SO long and it was SO good

Lunch: Shakeology. This is really the best part of my day. I always feel better after I drink it and my energy level completely changes. Lately I’ve been doing Chocolate Shakeology, ground flaxseed, almond milk, and cinnamon. Surprisingly this kept me full and satisfied.


Afternoon snack: Another fruit that I haven’t had a lot of is kiwi. It was so yummy. I paired it with a Larabar. For the record, this really tasted like an Apple pie.Kiwi Afternoon snack

Dinner: Last night I made dinner for the boy and me. I was excited about this meal. I made a beef roast with a hot tomato, parsley & garlic sauce, cauliflower and potato mash and broccolini. I must say it was pretty tasty (confession: this is the picture I took this morning of the leftovers I’m enjoying for lunch today. I swear it looked just like this last night :-))


All in all it was a good, clean eating day. The Larabar might not have been great, but it was ok. Looking forward to today’s clean eats!
